Easy Sofrito Recipe

Yield: 2-3 cups

Ingredients

1 green pepper, seeded and roughly chopped
1 red pepper, seeded and roughly chopped
1 yellow onion, roughly chopped
1 bunch cilantro, with stems cut off (should be mostly leaves)
5-6 cloves garlic, peeled
Olive oil

Directions

  • Blend together all the vegetables in a blender or food processor. If using a blender, you may have to blend the veggies in batches.
  • As you are blending the ingredients together, drizzle in olive oil to help you achieve a nice consistency.
  • Your sofrito should not be very liquid, but it should not be too chunky like a salsa. 
  • When blended, seal in an airtight container in the fridge or frozen in ice cubes. 

Recipe Tips

  • If using a food processor or high powered blender, you will be able to blend all vegetables together at the same time, and may not need olive oil.
  • You can use sofrito as a base for many soups, stews, rices, and meat dishes. 
  • If you prefer a chunkier sofrito, you may omit the olive oil.
